Abstract : The pomegranate (Punica granatum) is a fruit-bearing deciduous shrub or small tree growing to between five and eight meters tall. The pomegranate is native to Southwest Asia and has been cultivated and naturalized over the whole Mediterranean region and the Caucasus since ancient times. It is widely cultivated throughout Afghanistan, Algeria, Armenia, Azerbaijan, Iran, Iraq, India, Pakistan, Syria, Turkey, the drier parts of southeast Asia, Peninsular Malaysia, the East Indies, and tropical Africa. pomegranate is now cultivated in parts of California and Arizona for juice production. The pomegranate is grown in many area of Saudi Arabia. It is considered as one of the oldest known mentioned in the holy Quran. it is edible fruit due to it’s high biological value . Clinical trials were underway to examine the effects of pomegranate juice consumption on diseases as prostate cancer ,prostatic hyperplasia ,diabetes ,lymphoma ,rhinovirus infection ,common cold ,oxidative stress in hem dialysis ,atherosclerosis ,coronary artery disease . Pomegranate aril juice provides about 16% of an adult's daily vitamin C requirement per 100 ml serving, and is a good source of vitamin B5 (pantothenic acid), potassium and antioxidant polyphenols. The most abundant polyphenols in pomegranate juice are the hydrolyzable tannins called punicalagins which have free-radical scavenging properties in laboratory experiments. Punicalagins are absorbed into the human body and may have dietary value as antioxidants, but conclusive proof of efficacy in humans has not yet been shown. Other phytochemicals include beta-carotene, and polyphenols catechins, gallocatechins, and anthocyanins such as prodelphinidins, delphinidin, cyanidin, and pelargonidin. The ORAC (antioxidant capacity) of pomegranate juice is considered moderate when compared to other herbs and spices. The ORAC of pomegranate juice is measured at 2,860 units per 100 grams. The aim of this study is to extract and determine the pectin and tannin contents of pomegranate (seeds and peels).Also, to uses these extracts in industrial foods as juice and jelly. The following parameters were done, pH, moister content, protein, fats, fibers, total ash, methoxyl number, acetyl number, etherification number, total soluble solutes, reducing sugar, non reducing sugars. The results obtained showed that analysis of pomegranate juice showed that, humidity (8.2%), protein (1.8%), carbohydrate (75.5%), lipids (93.22%), pectin (9.6%), and ash (0.05%). Also, total sugar, reducing sugar, and non reducing sugar were 13.30%, 12.8% and 0.5% respectively. Also anthocyanin was 29%. Addition of ascorbic acid to juice increased it’s biological value due to inhibition oxidation of polyphenol compounds. Also heating reduced the level of anthiocyanin Addition of ascorbic acid to increase the biological value and to inhibit the oxidation of polyphenols compounds . Paturrilization at 95 oC for one minute lowered the decrease in ascorbic acid from 32.1, 32.1, 32.3, 32.4 mg/100ml to 30.2, 30.1, 29.9,n 30.2 mg/100ml respectively in case 0of gelatin and centrifugation treatment . The pectin level obtained from peel is relatively moderate and can be used in industrial foods, cosmetics and pharmaceutical products .
